Cranberries Pineapple with Almond Muffins - I have not seen my friend, SL for almost 20 years, though we kept in touch via email.  She is in Singapore now for a visit so will be meeting her.

Have baked these cranberries pineapple muffins to surprise her.

Cheesecake

Light Blueberry Cheesecake - Bought some nice blueberries from Cold Storage today and decided to bake a cheesecake.  Not the usual dense cheesecake but the light, fluffy and cottony cheesecake which we know as Japanese cheesecake. 

Made with meringue folded into the batter, it combines the richness of cream cheese and the softness of a sponge cake.  The other difference of this cheesecake is that it do not have the graham crust like the traditional cheesecake.

This cheesecake is quite a rave many years back and for those who do not like their cheesecake to be heavy (like the traditional New York cheesecake) , this will be the one.

Chinese New Year

Chocolate Mud Cake with Orange Cream - To keep to the tradition of having 'kam" (oranges) for CNY, I made this choc mud cake and top it with orange cream.

Choc & Orange is always a lovely combination and this cake is no different.

GONG XI Fa CAI to all
