Walnut Brownie Cupcakes - Was going for lunch with a friend and wondering what to give her as a gift. Finally decided to bake some brownie cupcakes and top them with roses and daisies that I have made with fondant. It is really colourful against the backdrop of satiny chocolate frosting.

Bouquet of Flowers Cake - What do I want to bake for my Mother for Mother's Day that will surprise her? Not an easy task ...Finally, my sister and I decided on doing a cake that look like a bouquet of flowers...60 flowers to mould and air-dried and when we put the last finishing touch on the assemble, we were pleased with the end result as it came from our hearts.

Carrot Cake - When I was thinking of what cake do I want to do for Mother's Day, as a dedication to all the wonderful Mothers and Mothers-to-Be out there, I wanted something uncommon from the usual fare of chocolate cake, blackforest cake etc.  I chose a Carrot cake but gave it a tropical twist with the addition of sweetened coconut and dried pineapple to the carrots, walnuts, rum-soaked raisins and wonderfully perfumed with cinnamon and nutmeg.  Happy Mother's Day 2012.

Red Velvet Cupcakes with Cream Cheese Frosting - This was baked on a afternoon where I wanted something special and with a frosting that is not too sweet where my father can also eat.  He is diabetic and is on a strict diet and is not often that he get too enjoy sweet treats.  So these are for him.
