Red Velvet Cupcakes with Cream Cheese Frosting - This was baked on a afternoon where I wanted something special and with a frosting that is not too sweet where my father can also eat.  He is diabetic and is on a strict diet and is not often that he get too enjoy sweet treats.  So these are for him.
