Special Occasion Cakes

Carrot Cake - When I was thinking of what cake do I want to do for Mother's Day, as a dedication to all the wonderful Mothers and Mothers-to-Be out there, I wanted something uncommon from the usual fare of chocolate cake, blackforest cake etc.  I chose a Carrot cake but gave it a tropical twist with the addition of sweetened coconut and dried pineapple to the carrots, walnuts, rum-soaked raisins and wonderfully perfumed with cinnamon and nutmeg.  Happy Mother's Day 2012.
