Perennial Favourites

No Fuss Brownies - These brownies were put together in a jiffy.  My 2nd son , Nicholas mentioned that it has been a while that I have baked brownies and asked that I bake them after church.  So with the classic brownie base, I have added marshmellow to the sour cream chocolate topping glaze.

The marshmellows were put under the broiler for about 3 mins to get the toasty brown color to them.  If you can get mini-marshmellows, it may look better as I have cut the marshmellows in irregular shapes.

Perennial Favourites

Waffles - These waffles are buttery, crispy and delicious. I have made these waffles in my traditional Belgian Waffle pan (pic above) over the stove.  This pan made lovely thick waffles.  The only thing with this traditional pan is that you have to watch the waffle, turn them to ensure even cooking  and that it is not burnt on one side!  However,  the end result is worth it.  If you have the electric waffle pan, it makes the job easier but sometimes the waffle do not have the depth as waffle should!!

Recipe

1 3/4 cups all purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
3 eggs
1 cup butter melted
1 1/2 cup milk

Whisk in a large bowl all the dry ingredients.  In another bowl , all the wet ingredients.  Make a well in the centre of the of the dry ingredients and pour in the wet ingredients.  Combine with a few strokes of the whisk.  Preheat the waffle iron and butter the pan (if required)   Pour scoops of batter according to the size of your waffle pan.

Serve with maple syrup and butter.

Nonya Dessers & Others



Pulut Serikaya - A nonya dessert made for my Father's 84th birthday.  We thought that we would deviate from the usual birthday cake routine and have something different. As kaya is sweet, my dad can only take a small piece (as he is diabetic) but it is something that he enjoys as he do not have the luxury to eat nonya cakes...

Perennial Favourites

Sugee Cake - Sugee cake , also known as Semolina cake is one cake, that you either like it or you don't.  It is a Eurasian heritage cake and most , if not all Eurasian homes will bake this during Christmas. Nonya homes will also bake this cake as well.    Many of the recipes for this cake are close -guarded secrets that are pass from generation to generation. It is a rather finicky cake and not easy to get it right.  It is a rather dense cake because of the semolina and is rich in flavour because of the copious amount of eggs and butter.   For special occasion, this cake is covered with Marzipan (almond paste).

The above is the traditional sugee cake with loads of eggs and butter.

I have also baked a healthier version with less eggs , butter and sugar and the cake is much lighter. [so that my diabetic father can eat] .  I'm sure matriach of traditional sugee cake will not approve of the healthier version!!

Nevertheless, there are 2 versions to choose from. With more people being more conscious of cholesterol and all, the healthier version is able to hold its own following as well.

Special Occasion Cakes



Banana Cake with Irish Bailey's Cream - What I like about this cake is the moulding of the pink Teddy and the Honey Jar for my friend's daughter.  This really give me simple joy! 

The Bible says, GOD loves the little children.  As this is for a little girl, I believe that my hands are just an instrument used to mould something beautiful for a little girl that is very loved.....both by her parents and her GOD.

Cookies & All

Cinnamon Chocolate Chip Cookies - I had wanted to make some quick cookies for my son and his friend who stayed at our home and were watching some movies.  I did not want to make the traditional choc chip ,so I tweak the recipe and added cinnamon into the dough batter.  It came out pretty good actually.  As I did not want to bake the neat round cookie, I roll the dough into a log and refrigerate it until it hardens.   Then I cut the dough like I would for a biscotti.   I thought I would try to see what the end result would be like ie the shape.  Upon baking, they expanded into irregular , jigsaw shapes with clear outline.  I just cut out the shapes before they cool down...
