Buttermilk Chocolate Chip Cake - A lovely, tender and moist cake sprinkled lavishly with Chocolate Chips. This cake is best left unadorned without any frosting. I have just dressed it up with fondant daisies and leaves.

Specialty Cakes
Tropical Carrot Cake - My son calls this the tic-tac-toe Carrot cake. This is a moist tropical-styled carrot cake with the addition of dried pineapple and coconut. The spices of cinnamon and nutmeg gives the cake the lovely aroma of the tropics.

Nonya Desserts & Others
Timus - An Indonesian dessert that is cooked by Sarifa, my mother's help. This dessert is typically cooked by the Indonesian locals....Simple and very delicious. It is very much like our local Goreng Pisang, but this is made of sweet potatoes. However the crust is not as crispy as our Goreng Pisang as it is not made of rice flour. The ingredients are as follows, though I am not able to give you the exact measurement as Sarifa do not measure in gms or ozs...it is 'agak agak' (own measurement - Nonya lingo).
a) Sweet Potatoes (steam and mashed) - approx 300 gms
b) cornflour
c) sugar (to taste)
Mix the mashed sweet potatoes with sugar and some cornflour. Roll them into oval size balls, coat lightly with cornflour. Put into the fridge for a while. Fry them on low fire till golden brown

Specialty Cakes
'Heaven is for Real' Cake - As it was the end of the school hols, I would like to bake a cake for my youngest son as he is going back to school tomorrow. I asked him what cake he wanted. He replied " Heaven is for Real' cake.... I was stumped! How do you do that!!
We invite our friends through various means...door hangers, flyers, social media etc.....food is another avenue to invite our neighbour, friends...

Little Babe - After attending my sugarpaste course, one of my friend asked me if I know how to mould 'little babies'...I told her 'No' ...however, her question set me on a quest...
So here is my very 1st little babe...still has to improve to get the face smoother...though we know that baby comes out all wrinkled up.....Ha! Ha!

Nonya Desserts & Others
Kueh Bingka (Nonya Tapioca Cake) - The planning for the Father's Day dinner menu started about 1 week back..between my mum, maid and I. Finally we settled for a Nonya/Indonesian theme with my mother making her Nasi Lemak which is my youngest son's favourite. Her maid, Sarifah made Soto Ayam and Begadil (Potato Cutlet). In line with the theme, my mother suggested that I made either the Pulut Serikaya (glutinous rice with kaya) or Kueh Bingka if she can get good Tapioca from the market.
It has been a while that I have made Nonya desserts again...refreshing change from the western cakes. Grating the tapioca, squeezing the coconut creme, pandan leaves etc. Satisfied with the end result. Looks like I will start making more again...going back to my roots!!

Cookies & All
Buttermilk Pancakes - I had some leftover buttermilk and did not want it to go to waste. It has been a while since I have done up a batch of pancakes. Since it is also the school hols and with all the boys at home, I thought it would be a good idea to do a batch of pancakes for them. The texture of these pancakes are soft, bouncy and they are not difficult to make. Drizzle them with butter and maple syrup or honey. Voila! You can get a homemade hotcakes!!
My youngest son gallantly volunteered to cook the pancakes for all of us after I have mixed the batter. As it is is first try to handle the griddle, I would say it is not too bad for a 12 years old!
I have put the recipe below for all the mothers, fathers, aunts, uncles, grandmas, grandpas and all who would like to make it for their loved ones. The recipe yield about 14 pancakes.
Adapted from one of my favourite cookbook Baking by Flavor by Lisa Yockelson
1 cup All Purpose Flour
1/2 tsp baking soda
1/8 tsp cream of tartar
1/8 tsp salt
3 tablespoon granulated sugar
1 large egg
3 tablespoon butter, melted and cooled
3/4 cup buttermilk
2 tablespoon milk
Whisk the flour, baking soda, cream of tartar, salt and sugar in a bowl. In another bowl, whisk the egg, melted butter, buttermilk, milk. Pour the whisked liquid mixture over the dry ingredients and stir to form a batter, using a rubber spatula. As you are mixing the batter, make sure that you break up any pockets of flour.
Heat a griddle or flat frying pan and when hot , spread a thin layer of butter using paper towel. Spoon 2 tablespoon -size puddles of batter on griddle, 2-3 inches apart. Cook for until the top is set and bubbles appear here and there (about 50 sec- 1min10). Flip the pancakes, using a wide spatula and cook for about 50 sec more or until cook. Cook remaining batter, greasing your griddle when necessary.
Serve the pancakes warm with dollops of butter, maple syrup / honey or even a dash of cinnamon powder.

Cupcakes
Chocolate with Mint Buttercream - After a week away for my church camp, I came back with many many ideas that I want to do, starting with Father's Day. I ask my son what flavour would he choose for his papa for a Father's Day cake and he said Chocolate. As chocolate is a universal flavour and well-loved by all ages, I decided to follow my son's wishes and do a chocolate base but give it a more 'adult' frosting, thus the Mint buttercream.
I have decided to make available these cupcakes in 6 pieces as well as I was thinking of the students and teens who may want to buy something to appreciate and honour their Dad but may not have so much to spent on cakes....

Muffins
Banana Muffins - The whole house was filled with the aroma of cinnamon and bananas as trays and trays of muffins were offloaded from the ovens throughout the week. Big Fat Os were the other bakes that were churned out as well, making a total of 500+ bakes in all. The bake-out was in partnership for a Corporate charity event and it is one of the most interesting opportunity I had.
Though physically tiring, I am truly blessed with family members who helped, friends who went out of their way to assist me in delivery, covered me in prayers and my many many friends in the Corporate who supported the Event, who liaise with me , packed the goodies etc. To all of you, THANK YOU VERY MUCH!!
