Cookies & All



Buttermilk Pancakes - I had some leftover buttermilk and did not want it to go to waste.  It has been a while since I have done up a batch of pancakes.  Since it is also the school hols and with all the boys at home, I thought it would be a good idea to do a batch of pancakes for them.  The texture of these pancakes are soft, bouncy and they are not difficult to make.  Drizzle them with butter and maple syrup or honey.  Voila!  You can get a homemade hotcakes!!

My youngest son gallantly volunteered to cook the pancakes for all of us after I have mixed the batter.  As it is is first try to handle the griddle, I would say it is not too bad for a 12 years old!

I have put the recipe below for all the mothers, fathers, aunts, uncles, grandmas, grandpas and all who would like to make it for their loved ones.  The recipe yield about 14 pancakes. 

Adapted from one of my favourite cookbook Baking by Flavor by Lisa Yockelson

1 cup All Purpose Flour
1/2 tsp baking soda
1/8 tsp cream of tartar
1/8 tsp salt
3 tablespoon granulated sugar
1 large egg
3 tablespoon butter, melted and cooled
3/4 cup buttermilk
2 tablespoon milk

Whisk the flour, baking soda, cream of tartar, salt and sugar in a bowl.  In another bowl, whisk the egg, melted butter, buttermilk, milk.  Pour the whisked liquid mixture over the dry ingredients and stir to form a batter, using a rubber spatula.  As you are mixing the batter, make sure that you break up any pockets of  flour.
Heat a griddle or flat frying pan and when hot , spread a thin layer of butter using paper towel.  Spoon 2 tablespoon -size puddles of batter on griddle, 2-3 inches apart.  Cook for until the top is set and bubbles appear here and there (about 50 sec- 1min10).  Flip the pancakes, using a wide spatula and cook for about 50 sec more or until cook.  Cook remaining batter, greasing your griddle when necessary.
Serve the pancakes warm with dollops of butter, maple syrup / honey or even a dash of cinnamon powder.
