Chocolate Mud Cake - I love the intensity and richness of the chocolate in this cake. This cake is truly for Chocoholics! I have paired it with Cream Cheese Frosting which complement the rich chocolate beautifully.
You can also ganache it and it will be a double choc hit. A scoop of vanilla ice-cream will be ideal if it is without frosting.

Have a Sugee Christmas - I have been asked again and again on whether I will be offering my sugee cake this Christmas.
I wanted it to be something different and unique so I decided to do 'Sugee the Snowman' and a 'Sugee Gift Loaf'.
Sugee Cake is a traditional cake of Eurasian/Nonya origin. It is made of butter, semolina, almonds,eggs and brandy (I use XO brandy). Those who love sugee will appreciate its richness and flavour.
Sugee the Snowman will make a beautiful and unique Centrepiece and is suitable as a gift when attending a party.
I have kept the Sugee Gift Loaf simple and did not cover it with marzipan. For those who love your sugee with marzipan, do let me know and I can customise it for you.
All the trimmings on the snowman are handmade with marzipan, likewise the ribbon on the Sugee Gift Loaf too.

Orange Sesame with Orange Buttercream - An orange cake studded with sesame gives this cake its unique texture and appearance. The cake is delicious on its own without the cream, but as this is a cake for a church function, the orange buttercream was added on to complement the flavour.
This cake is definitely a WINNER as many customers who ordered have given positive comments. Some of the comments are " Something VERY different", "Interesting" , "I'm getting this for my mom", "Buttercream was light", "Can I have another slice?" etc....

Mooncakes
Green Tea Snowskin Mooncake - Bought some lovely mooncake moulds from my recent trip to China so I thought I would make some mooncakes this year.
Green Tea is my husband's favourite, so I started with this flavour first. Not too bad though I personally felt the skin texture of the recipe can be further improved. Will definitely improve on the recipe till satisfied...I have 1 year to get it right!!
My abled assistant, my son, who gave me a helping hand on these mooncakes. Thank you , Nigel! He love pressing them out of the mould!

Rainbow Cake - This is the inside of the rainbow cake that I have posted earlier...Many folks have asked what does it look like inside...
It is rather similar to the galaxy cake ..only that this is the 7 colours of the rainbow...one will never know how the colours will play out once it is baked and the design that it will eventually turn out to be...that is the excitement of baking this cake...
Of course, you can bake it layer by layer so that you have nice layered colour...
The choice and option is yours!! I love it this way actually!!

Rainbow Cake - With the recent demise of my father, I was wondering what cake to bake for my mother's birthday. She didn't want any birthday dinner nor cake. We told her that life has to go on, thus we had a small family dinner and I decided to bake her this rainbow cake.
Whenever a rainbow is seen in the sky, we are often reminded of the story of Noah and the Ark. After the flood, a rainbow was seen and the rainbow represents the Promises of GOD. There are numerous promises of GOD in the Bible but during this time, the most treasured and comforting is Psalms 23 which is my father's favourite Psalms..The Lord is with us to lead, restore and comfort in whatever circumstance.

Special Occasions
German Chocolate Cake with Cream Cheese Frosting - I have paired this German Chocolate cake with Cream Cheese Frosting, a deviation from the usual Chocolate Ganache. Depending on the richness, German Chocolate cake is sometimes very sweet and rather heavy but this cake remains moist and soft even when refrigerated. This cake has the nice richness of chocolate with the mellowness of the cream cheese.
The cake was baked for the VFC Youth Cell member's birthday celebration at my home last night.

As Cheesecake cannot be baked at the 11th hour, I then decided to put together the 2 ingredients that teenagers love, Chocolate and Cheese, thus the above cake was born.
It is always a delight to see how teenagers devour cakes with their hearty appetites!!

Perennial Favourites
Milk Madeleines - These are an adaptation of the western madeleines...much lighter with a fragrance of milk. It has a creamy texture as some of the flour has been replaced with powdered milk.
Milk Madeleines can be baked in the traditional madeleine moulds but I wanted to do it in little petite cupcake cases. These are excellent just plain as they are , with a hot cup of tea. Leave it unadorned so that one can taste the creaminess of the cake.

Special Occasions
Buttermilk Walnut Cake - This cake was baked for our Church Divisional Missions Rally gathering where all the Cell groups of Men, Women and Youth come together to hear the message of Missions and also to have a time of fellowship of food and chatter.
Each member contributed and we had a tableful of food with mee goreng, chicken wings, agar agar, apricots, tortillas, chocolates and different types of fruits.
The beauty of the fellowship is that we have the Wisdom and Honour of the grey-haired who have gone out to Missions as examples to the youth and the rest who has yet to take the step forward.

Cheesecake
Chocolate Marshmallow Cheesecake with Hazelnut Grappa - This cake is super rich, super chocholaty and super cheesy. Definitely for someone who loves their chocolate + cheese. With the addition of marshmallow, it just gives the added oommpphh!!
This cake was a celebration of my sons' birthdays. We wanted to make the cake fun so my sis and I decided on a Beary tea party' as the decor for the cake. It was actually very interesting to do the little details of the decor ie the tea pot, saucer, tower of cupcakes and of course, the star of the party, the bears. Each detail was lovingly handpainted.
To my sons, Nicholas and Nigel - I thank GOD each day for both of you. May you be blessed abundantly on your special day.

Perennial Favourites
No Fuss Brownies - These brownies were put together in a jiffy. My 2nd son , Nicholas mentioned that it has been a while that I have baked brownies and asked that I bake them after church. So with the classic brownie base, I have added marshmellow to the sour cream chocolate topping glaze.
The marshmellows were put under the broiler for about 3 mins to get the toasty brown color to them. If you can get mini-marshmellows, it may look better as I have cut the marshmellows in irregular shapes.

Perennial Favourites
Waffles - These waffles are buttery, crispy and delicious. I have made these waffles in my traditional Belgian Waffle pan (pic above) over the stove. This pan made lovely thick waffles. The only thing with this traditional pan is that you have to watch the waffle, turn them to ensure even cooking and that it is not burnt on one side! However, the end result is worth it. If you have the electric waffle pan, it makes the job easier but sometimes the waffle do not have the depth as waffle should!!
Recipe
1 3/4 cups all purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
3 eggs
1 cup butter melted
1 1/2 cup milk
Whisk in a large bowl all the dry ingredients. In another bowl , all the wet ingredients. Make a well in the centre of the of the dry ingredients and pour in the wet ingredients. Combine with a few strokes of the whisk. Preheat the waffle iron and butter the pan (if required) Pour scoops of batter according to the size of your waffle pan.
Serve with maple syrup and butter.

Perennial Favourites
Sugee Cake - Sugee cake , also known as Semolina cake is one cake, that you either like it or you don't. It is a Eurasian heritage cake and most , if not all Eurasian homes will bake this during Christmas. Nonya homes will also bake this cake as well. Many of the recipes for this cake are close -guarded secrets that are pass from generation to generation. It is a rather finicky cake and not easy to get it right. It is a rather dense cake because of the semolina and is rich in flavour because of the copious amount of eggs and butter. For special occasion, this cake is covered with Marzipan (almond paste).
The above is the traditional sugee cake with loads of eggs and butter.
I have also baked a healthier version with less eggs , butter and sugar and the cake is much lighter. [so that my diabetic father can eat] . I'm sure matriach of traditional sugee cake will not approve of the healthier version!!
Nevertheless, there are 2 versions to choose from. With more people being more conscious of cholesterol and all, the healthier version is able to hold its own following as well.

Cookies & All
Cinnamon Chocolate Chip Cookies - I had wanted to make some quick cookies for my son and his friend who stayed at our home and were watching some movies. I did not want to make the traditional choc chip ,so I tweak the recipe and added cinnamon into the dough batter. It came out pretty good actually. As I did not want to bake the neat round cookie, I roll the dough into a log and refrigerate it until it hardens. Then I cut the dough like I would for a biscotti. I thought I would try to see what the end result would be like ie the shape. Upon baking, they expanded into irregular , jigsaw shapes with clear outline. I just cut out the shapes before they cool down...
